Spelt-wheat (Triticum aestivum subsp. spelta, or sometimes: Triticum spelta) is ancient variety of wheat, it was widely grown in Alps and Norther Europe several centuries ago. Now it is grown and used again, it is good alternative to wheat and began to replace wheat.Spelt grains have a significant advantage over wheat grains. Spelt grains remain in the husk after harvesting and threshing and it is naturally protected against pollution, pesticides and insects. The most important and best characteristic of spelt it is certainly its protein content. It contains a lot of high quality proteins and is therefore healthier than wheat and more compact appearance. Spelt is also a good source of dietary fiber, vitamins and minerals. Substances of spelt grain are also more water-soluble than of wheat grain, which makes them easier for the body to digest. Spelt wholegrain flour is made in the traditional way to obtain high quality spelt flour.
